Recipe

  • 1 (8 ounce) jar sun dried tomatoes in oil, undrained
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 skinned and boned chicken breast halves, cut into strips
  • 3 tablespoons chopped fresh or 1 tablespoon dried basil
  • 1 cup half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 ounces fettuccine, cooked

Instructions

  1. Drain tomatoes, reserving ¼ cup oil; coarsely chop tomatoes

  2. Sauté onion and garlic in 2 tablespoons reserved oil over medium-high heat until tender. Add chicken; cook, stirring occasionally; 6 minutes or until done.

  3. Add tomato and basil; cook, stirring occasionally, 2 minutes. Stir in remaining half-and-half, salt and pepper. Toss with hot pasta.
