Recipe
- 1 cup diced cooked chicken breast
- 1/2 cup diced pineapple, fresh or canned
- 1/2 cup diced cucumber
- 1/4 cup shredded carrots
- 1 scallion white and green parts, chopped
- 3 tablespoons fat free plain Greek yogurt
- 2 tablespoons slivered almonds
- pinch of salt
- pinch black pepper
- 1 cup shredded lettuce
- 2 whole wheat pita pockets, halved
Instructions

In a large bowl, mix the chicken , pineapple, cucumber, carrot, scalion, yogurt, almonds, salt and pepper until well combined.

Divide the lettuce between the pita halves.

Spoon the chicken mixture into the pita pockets and serve.
