Recipe

  • 1 cup diced cooked chicken breast
  • 1/2 cup diced pineapple, fresh or canned
  • 1/2 cup diced cucumber
  • 1/4 cup shredded carrots
  • 1 scallion white and green parts, chopped
  • 3 tablespoons fat free plain Greek yogurt
  • 2 tablespoons slivered almonds
  • pinch of salt
  • pinch black pepper
  • 1 cup shredded lettuce
  • 2 whole wheat pita pockets, halved

Instructions

  1. In a large bowl, mix the chicken , pineapple, cucumber, carrot, scalion, yogurt, almonds, salt and pepper until well combined.

  2. Divide the lettuce between the pita halves.

  3. Spoon the chicken mixture into the pita pockets and serve.
