Recipe

  • Uncle Chris' Brine
    • 1 cup salt
    • 1 bottle liquid smoke
    • 1/2 gallon of water
  • Great Grandpa's Brine
    • 1 cup brown sugar
    • 1 cup salt
    • 1 quart of water

Instructions

  1. Soak fish for atleast 8 hours

  2. Let fish air dry for 3-5 hours

  3. Smoke fish for 4 hours

  4. Then cook at 200 degrrees until done (3-5 hours). Rotate racks every 30 minutes and also rotate racks 180 degrees every 4th rotation.
