Recipe
- Uncle Chris' Brine
- 1 cup salt
- 1 bottle liquid smoke
- 1/2 gallon of water
- Great Grandpa's Brine
- 1 cup brown sugar
- 1 cup salt
- 1 quart of water
Instructions

Soak fish for atleast 8 hours

Let fish air dry for 3-5 hours

Smoke fish for 4 hours

Then cook at 200 degrrees until done (3-5 hours). Rotate racks every 30 minutes and also rotate racks 180 degrees every 4th rotation.
